½ of a small jalapeño pepper
½ cup firmly packed fresh parsley
½ cup firmly packed fresh cilantro
2 garlic cloves
1/2 medium onion
1 tsp cumin
salt and pepper to taste
¼ tsp red pepper flakes
3 Tbsp white or rice vinegar
1/4 cup fresh lime juice (2-3 limes)
2 Tbsp olive oil (optional)
Chop all ingredients finely and mix to combine or grind in a food processor.
Enjoy as a topping to almost any dish!
