Cuban Mojo Roasted Chicken (Whole or Bone-In)
Juicy, zesty, and packed with bold Cuban flavor, this roasted chicken is marinated in TruFlavor’s Cuban Mojo seasoning with fresh lemon juice and olive oil. Whether you're roasting a whole bird or bone-in pieces, it comes out tender, aromatic, and perfect for any occasion.

INGREDIENTS
- 1 whole chicken (4–5 lbs) or 3–4 lbs bone-in chicken pieces (thighs, legs, or split breasts)
- 3-4 Tbsp TruFlavor Cuban Mojo Seasoning Blend or TruFlavor Spicy Cuban Mojo Seasoning Blend
- 2 Tbsp olive oil
- ¼ cup fresh lemon juice (about 1 large lemon)
DIRECTIONS
1. Prepare the Marinade:
In a bowl, whisk together the TruFlavor Cuban Mojo seasoning, olive oil, and lemon juice until well combined.
2. Marinate the Chicken:
Place the chicken (whole or pieces) in a large resealable bag or deep dish.
Pour the marinade over the chicken, rubbing it thoroughly over and under the skin where possible.
Cover and refrigerate for at least 4 hours or overnight for deeper flavor.
If Using a Whole Chicken:
3. Preheat and Roast:
425°F (220°C).
1 hour to 1 hour 15 minutes, or until internal temp in the thickest part of the thigh reaches 165°F (74°C).
If Using Bone-In Pieces:

400°F (204°C).
40–50 minutes, or until the internal temperature reaches 165°F (74°C) and skin is golden and crisp.
4. Rest and Serve:
Let chicken rest for 10–15 minutes before carving or serving.
Pair with rice, beans, plantains, or a fresh salad.
