2 lb of Chicken, Cleaned and dried to remove excess moisture.
2 Tbsp Olive Oil
1/2 Cup Fresh Lemon or Lime Juice
Mix ingredients in bowl before adding chicken.
Marinate on counter for at least 20 minutes before cooking and up to overnight in fridge.
Discard excess marinade.
Make sure you pat dry the chicken thoroughly so the chicken absorbs the marinade.
Cold meats will NOT cook evenly. Let the chicken rest on counter for at least 30 minutes before cooking.
Best cooked on the grill.
